Diners are first presented with a series of complimentary amuse bouche such as soy marinated shrimp with a side of dried green mustard leaf with fried crosne and a shrimp spring roll, served with fresh tomato and smoked ricotta cheese.
For mains, diners are presented with several options such as sous-vide white fish and seared duck breast with smoked leek and orange miso jus, but its signature roasted pork belly comes highly recommended. A contemporary version of the Korean bossam (boiled pork wraps), the dish comprises of sous-vide king shrimp, potato purée, baby spinach, mushrooms, and Chef Tae Hwan Ryu’s uniquely sweet and savoury shrimp soy reduction.

Lastly, make sure you save some room for Ryunique’s whimsical dessert, which consists of caramel rice ice-cream, kiwi purée, green tea powder, lemon panna cotta, jasmine tea jelly, cake, sweet crumbs and edible flowers, is artfully displayed on an antique picture frame.
